Chocolate mousse recipe (4-5 personen) (8/20/2002)

Recipe DD1

Ingredients:

  1. 250 g dark chocolate - as bitter as possible
  2. 150 ml whipping cream
  3. a little bit of butter
  4. 3 eggs
  5. a little bit of salt
  6. half a (soup)spoon of sugar
  7. a little bit of cacao

Procedure:

  1. Melt all the chocolate on a cooking fire
  2. Use a big recipient to put the cream in, beat it up and add the butter, stir
  3. Add the egg yokes to the cream and add a little bit of salt - keep the egg white in a separate recipient
  4. Beat up the cream-yoke mixture, stir
  5. When the chocolate is completely molten, get it off the fire and let it cool down
  6. After the chocolate is sufficiently cooled down (this is more or less arbitrary, but the temperature seems to be an important parameter - cfr. recipes on the web), pour it onto the cream-yoke mixture
  7. Stir the mixture - add the cacao (also some liquors might be added at this stage)
  8. Put the sugar into the egg white and beat it up forcefully
  9. Pour the beaten egg white onto the chocolate mixture, mix and stir
  10. Pour the resulting mixture in smaller  recipients (e.g. cups or small dishes)
  11. Put in the fridge and let it rise there for at least a couple of hours
  12. Sample!

Recipe DD2

=Identical to Recipe DD1, except for the amount of cream: use only 90 ml of cream

Note: the purpose of this is to investigate the influence of the *amount* of cream, as this seems intuitively to be an important parameter
